if it happens every time, then run with debug=3 in kamailio.cfg, the debug messages should give more hints about what happens there.

By increasing debug level to 3, the Kamailio is crashing:
CRITICAL: <core> [core/pass_fd.c:277]: receive_fd(): EOF on 41 ALERT: <core> [main.c:756]: handle_sigs(): child process 25779 exited by a signal 11 ALERT: <core> [main.c:759]: handle_sigs(): core was not generated
Also, the Network Queue - is getting full very fast:
Every 2.0s: ss -4 -n -l | grep 5060
udp UNCONN *4352 *1280 192.168.180.10:5060 *:* udp UNCONN *93568* 1280 172.16.180.10:5060 *:*
At the moment Kamailio is sending logs to the rsyslog daemon: local0.* -/var/log/kamailio/kamailio.log
I will try to investigate the rsyslog daemon - and how to make it able to process more logs coming from kamailio service.

can you reproduce the crash?
If yes, do 'ulimit -c unlimited' in the terminal where you are going to start kamailio and then run it as root. You should get a corefile that is useful for troubleshooting. In the logs you sent, the core was not generated.
Once you get a core file, inspect it with gdb and send here the output for gdb command:
bt full
