xcap_server examples refer to pseudo variable $hu, which is not documented on pseudo variables wiki page:

indeed, seems I missed that -- I will try to fix the docs soon if none is doing it meanwhile (it is in 3.1 as well). The PV is exported by xhttp module and gives the http url, which is practically the original URI of the request.
