Is there any solution to that problem?
I'm running a machine on the public and I'm not keen leaving it open all the time just for the media sessions.
Does ser or the nathelper / mediaproxy modules send the port there are going to use?
This way I think I can open just one port at a time and close it when the session ends.

You can configure the range of ports in the sources of rtpproxy and open just that range in iptables. The rtpproxy will use only ports from the portrange.
