Yes. you have to use rtpproxy and force RTP via this RTP proxy. rtpproxy allows saving of the RTP session.
(refer to rtpproxy's command line options)

not with ser directly, but if you use rtpproxy/mediaproxy to process the audio of the phones ... then you can.
