Is there any way to extract Expires from 200 OK (response to REGISTER) ? I will need to re-use this value in 3rd party registration being sent to application server.

you can try with:
$sel(contact.uri.params[expires])
Alternative, you can use {tobody.params} transformation over the Contact header body, then the {param.value,expires} transformation.
