Is there a way (A script or something) to load SER so that we can monitor server performance once realtime traffic passes through it?

with sipsak (http://sipsak.berlios.de) you should be able to easily put some load on your SIP proxy. If you find something free which simulates more realistic daily SIP traffic I would be really interested in it.

It's a little more complex to configure but the XML interface allows for complete control over the conversations.

Thanks for your ideas. I found that there is a load generator in the VOCAL project (www.vovida.org) called ElGee. However SIPStone metrices (http://www.sipstone.org/) are not implemented at the moment I think.
