If it is already present on the SIP message, just look for it with a REGEX...
The question here is if Your UA is able to produce/send '*' in SIP messages as a TO/FROM field...

That will only work if you use SIP INFO messages, RFC2833 or inband won't. I don't think SER can actually catch dtmf without doing RTP proxying and I doubt that either nathelper or mediaproxy support that.
