OpenSer then logs in /var/log/openser, true, but it still logs in /var/log/syslog. ¿?¿ Obviously I don't want OpenSer logs appearing in /var/log/syslog.

AFAIK some versions of syslogd use a different syntax for the configuration files. Perhaps the "*.*" rule part catches all the log messages, regardless the later restrictions?
Thanks, but I already tryed that and the issus persists. Unfortunatelly syslog syntax is a "little" strange and complex. Really I wouldn't like to dedicate too much time to it :( but I'll investigate it.
