thanks for investigating it.
For the moment, I think you can go ahead and commit this proposed patch
for a quick fix in modules/app_lua/Makefile.
When time will allow, we can look to get a generic fix in the core
makefiles.

something like -DFOO=\"bar\" is a valid flag for gcc and their makefiles
should be able to deal with it. I've already pointed out the place that
needs fixing.
