I think I got this line working, but I'm sorry to say that I'm really
not sure since I just used it for testing and that was a couple of
months ago..

But here goes:
subst('/From:(.*)sip:([0-9]+)@(.*)>(.*)$/From:\1sip:\2 at mynewdomain.com>\4/i');
