Hi Lawrence,

check out Configure-Sems-Ser-HOWTO in the documentation that comes with 
te source (sems/doc directory), or linked from iptel.org/sems

There is a sample config file here as well: 
(http://ftp.iptel.org/pub/sems/ser.cfg , linked from iptel.org/sems, too).

email address is passed to sems as additional header: P-Email-Address; 
you load it to an AVP and append it to the INVITE with tw_append.
