Hi Greg,
indeed, a B2BUA is the best way to keep trace of a call. To avoid
forcing all RTP traffic trough your server (which many people find
"expensive"), you can use a pseudo-B2BUA which interfere only with the
signaling part, letting the RTP to go end-to-end.
