no, Jabber server is not a must. You need it only if you want to install 
SIMPLE to Jabber gateway.

SER has nothing to do with squid. SER is a standalone proxy for SIP.

None of the modules is a must. You just load some of them depending on 
what you want to achieve. SER works good enough just with the default 
config file from the package. If you tell us what SIP services you want 
to have into your box we can tell you what modules you need to load,
