writing logs is the common debugging I do. Otherwise, you can use any
debugger available for linux, best are the ones with support for
multiprocessing. Perhaps the best is to start kamailio with children=1
and attach to the sip worker process (see output of kamctl ps).

For debugging kamailio.cfg, besides xlog, debugger module has plenty of
options.
