Because RFC 3261 defines it:

 From        =  ( "From" / "f" ) HCOLON from-spec
from-spec   =  ( name-addr / addr-spec )
                *( SEMI from-param )
addr-spec      =  SIP-URI / SIPS-URI / absoluteURI
                                       ^^^^^^^^^^^^^^
