[Serdev] Best way to rewrite From header

I am working on a dynamic DB routing module for SER (add Asterisk style
extension routing for SER). I'm almost done with it but I'm having a hard
time finding a good way to rewrite existing header fields. For example I
want to rewrite the following:

From: Test Box <sip:TestBox at 192.168.0.1>;tag=7e8d325829058e17o1

into

From: Michael Shuler <sip:3096700575 at 192.168.0.1>;tag=7e8d325829058e17o1

Is there a function buried somewhere deep in SER that I just haven't found
yet? I'm basically looking for the equivalent of the do_action() SET_URI_T
plus another function that will allow the "Test Box" change to "Michael
Shuler". SET_URI_T seems to only work on the requesting URI and not on any
of the header fields unless I'm missing something.
