Summary: XMPP documentation update

Initial Comment:
An update of the XMPP module documentation.

Mostly updates for readability and more references using XMPP terminology, like "s2s" and "component interface". Also, made it a bit less depending on a particular server.

When referring to a library, I don't think the name of a Linux distro package works well, we need the full name and in most cases also a URL and possibly a version that is known to work. OpenSER runs on many more platforms than Linux.
